By David Eller Lose weight permanently by doing it without hunger A local woman columnist wrote a column on how she realized she should exercise more & take in less calories. But she said she found it hard to push herself away from the table or eat small portions or deny herself food when she had such strong urges to eat. I was concerned for her since denying yourself food when you are actually hungry, if it works at all to lose excess fat or lose weight, it almost never works to keep it off. So I emailed her these key secrets to permanent weight loss & taking off excess fat. (There are many others. But these are some of the most effective ones. And, she is far more likely to lose fat she keeps off if she uses them instead of denying herself food when she is hungry.) In order to lose fat & keep it off you do have to burn more calories than you take in initially & not take in more than you burn after that. That’s true. But the very urge to eat she wrote about makes it hard to impossible to do that permanently for people by “pushing yourself away from the table.” My wife is a history buff & can tell you about some of the events in European history to prove it. But it’s quite clear that almost all people today are the descendants of the people who liked to eat when food was available & who tended to eat more when stressed if the food was there to eat. The people who werent like that didnt survive the famines. So most of us are NOT descended from them. So to make keeping fat off permanently, you have to work out how to eat more or at least not too much less & still not take in more calories than you burn–& you have to do it without feeling hungry. Mercifully that turns out to be doable. If you eat protein foods you get a double benefit because processing protein foods is proven to burn up more calories than carbohydrates; & they also make you feel full & fed longer after you eat them. Even better, the plant based protein foods like beans & nuts have lots of fiber which also helps you feel full. And, nuts also have health-enhancing fats & are satisfying enough they are proven to prevent you from eating other foods enough they are net calorie neutral to eat even with their high fat content. Other protein foods in moderation that are health-OK include: eggs in moderation; wild caught salmon & sardines; other seafood like shrimp, crab, lobster, & oysters; grass fed ONLY beef & buffalo; & free range chicken & turkey. I lost 30 pounds & kept it off when I read that Weight Watchers’ research has found that green & other nonstarchy vegetables have zero effective calories. Since I knew that vegetables have huge health benefits & that I was eating very few each day, I added just two or three servings MORE each day. What I found was that this was the biggest secret to weight loss. I’d have a serving of my main protein dish which usually also had health Ok fats like wild caught salmon or beans with extra virgin olive oil & tomato sauce & my cooked broccoli. This enabled me to be full & satisfied with just that as I was simply no longer hungry. What I realized was causing the fat loss was that I was no longer eating two servings of main dish or a serving of main dish & dessert that I’d been hungry for before. So, without making myself stop eating while I was still hungry, I was taking in less calories & was eating more health-enhancing micronutrients. Since it wasn’t that hard, I have simply kept doing it. The other two things I do that kept me from being really fat in the first place in my sedentary work is: 1. to do a short strength training session several times a week alternating between leg exercise one day & upper body exercise the next & a vigorous session of cardio exercise on 3 nonconsecutive days each week. So, I burn a LOT more calories — between the calories burned directly by the exercise & the calories burned by the heavier, more dense muscles it has given me — than someone my age & height would burn who has similar work — & who doesn’t exercise regularly. So, I can literally eat MORE & not fatten up. And, so can you if you exercise similarly. 2. I never got into the habit of drinking soda or eating junk snack foods. And, I weaned myself away from all refined grains & most sugar. Those foods are all proven fatteners as they have virtually no fiber or real nutrition so you take in their calories fine but you don’t feel less hungry. It’s also helped me stay away from them as I’ve read of the research on how bad transfats & high fructose corn syrup are for your health. I hope she finds that helpful. And, I hope it is helpful for you also. These are not the only keys to losing fat without hunger. But they are some of the most important & effective. Here are two more: Knowing the glycemic index of foods & adding MORE low glycemic index foods & eliminating most or all of the high glycemic foods you were eating also helps. Finding a way to physically relieve stress that works for you has been proven to make eating right easier to do also helps. I’ve made a study of ways I can protect my health & now subscribe to both alternative & medical sources of health information & useful health news. I’ve raised my HDL cholesterol to 95 & cut my LDLs from 130 to 84 without drugs. And, I’ve lost 30 pounds & kept it off. I do both cardio exercise & strength training regularly each week. Going Organic Shouldn’t Be Complicated.

By Susan Yurek As a kid I read 19th century literature, including “On Walden Pond” by Henry David Thoreau. An early environmentalist, HDT eschewed modernization and lived his own philosophy by leaving civilization and building himself a cabin in the New England woods “on Walden Pond” (”pond” being the New England vernacular for “lake”). There he journaled his thoughts about living simply, and decried the advancement of the modern age, industrialization, and its desecration of Nature and simple values. The book partially grandfathered the Back-to-Nature, and subsequent organic movements of the 20th century. Interestingly, the roots of those movements seem tied in two centuries, to dehumanization by tsunamis of global industrialization, commercialization, and technological fusion into the lives of ordinary people. First, I am not 160 years old, I just read the book. Secondly, it really is possible for bright young teenagers to learn and understand 19th century literature…unplug that screaming media center. That said, “On Walden Pond” introduced a respect for naturalism that never left my consciousness. The thought of a simpler, more respectful and organic lifestyle is as tantalizing now as it was 160 years ago, or even 40 years ago (or 20 years ago…I’m not that old). Which is why I so greatly admire Amish and Mennonite communities for their time tested, steadfast refusal to relinquish personal freedoms to corporate industrialization. I never did become an environmental purist. Our age is what is it is. My blow-dryer is my friend, after all. But the growth of the organic industry gives us an opportunity to rethink our relationship with the planet, and our daily needs. We have a chance to gradually introduce organic products into everyday living, and to dictate quality of life for ourselves and our families. “On Walden Pond” is a good read. Even I find some of HDT’s suggestions somewhat impractical though (living naked in the woods is a little more exposure to tiny critters than I care to test…nasty little things). However introducing organic textiles and foods, recycling, decreasing energy consumption, and dozens of other environmentally sensible practices, will go a long way toward not only reclaiming our environment for ourselves and descendants, but will just plain make you feel comfortable. The switch to organic living should be easy, personal, natural, and without stress. Morphing into a committed activist is not required. So don’t dive in, rack up the credit card bills, and feel obligated to protest anything (crowds can be somewhat um, smelly?). Itchy skin? Buy some organic cotton sheets or bath towels. Got a baby on the way? Buy some organic baby bedding. Try organic coffee, shop local organic produce stands on Saturday. Just relax, enjoy, and remember hot-headed Thoreau’s most famous credo: “Simplify, Simplify, Simplify!”. Being healthy is of crucial importance in the life of everyone. I do not believe that there is anyone who relishes the anguish of disease. Without health you cannot function properly in any area of your life. Whether enjoying the normal faculties of life or mentally unbalanced, every person would rather be perfectly healthy than endure the tortures of pain, sickness and disease, but there comes a time when we must seek medical help. It is unfortunate that instead of healing the sick, very often some medicines interfere with the natural process of healing, resulting in additional suffering and further deterioration of health. In ancient times, illness was cured by the use of herbs and other natural therapies which always proved very effective. Today, those same therapies as well as modern discoveres based on those of ancient times are referred to as alternative medicine and the public has been brainwashed into believing that the treatments are worthless; yet, many diseases that have been deemed ‘incurable’ are being healed by alternative means but, unfortunately, these cures have never been heard of by countless sufferers. What is called conventional medicine (also referred to as mainstream, standard, allopathic or orthodox medicine), is man-made synthetic drugs that were not in existence in ancient times. Interestingly, so many diseases were not around in those days as there are today. The main difference between the two systems is that alternative medicine is concerned about the prevention of disease and pays attention to and deals with the cause by treating the body as a whole. It focuses on preventing disease before it starts. It views the presence of disease as an imbalance of the emotional, mental and physical state of a person and endeavors to support and strengthen the immune system by natural means. Alternative medicine contends that the body is naturally able to heal itself and remain stable - known in medicine as homeostasis. On the other hand, conventional medicine is not concerned with preventing disease but rather with using synthetic drugs to cure an already established ailment. It is more interested in treating just the symptoms of disease by scientific techniques and technology instead of treating the whole person. Many conventional drugs are said to have the potential to damage the liver and kidneys, and cause mental depression, heart falure, cancer and other adverse side effects. Now, if that is so, why are they still being manufactured and sold to the public? Where is the concern for public health and safety? Note that since the introduction of conventional medicine, instead of there being greater relief from illness, there has been an exponential surge of diseases wreaking havoc in the lives of unsuspecting mortals. Why is this so? If conventional medicine were the answer to health problems, why are there so many more diseases prevalent today? The interesting thing is that a name is readily given to each new disease and some form of synthetic remedy is quickly manufactured for sale! Conventional medicine has been so well advertised that the public is convinced that it is the only way they can get relief from devastating illnesses. They jump at the announcement of any new supposedly super healing conventional medicine and with no hesitation embark upon treating themselves. This is especially so in the case of weight loss. The sad thing is that no real cure is realized from these, whereas there are natural remedies that have been proven to cure. I can personally attest to certain cures that I have experienced through the use of natural remedies. It is well known that some drug manufacturers have had to withdraw their dangerous medication because of the likelihood of patients suffering heart attack and stroke. Most synthetic drugs, if not all, have dangerous side effects of which the public is unaware. Some are very detrimental to unborn babies. So why are these drugs still being sold and at such exorbitant prices? The general public is not sufficiently made aware of the dangers of conventional drugs. For obvious reasons, no attempt to do so is made by those who should educate the unwary and encourage the use of alternative medicine. Obviously, if disease is prevented by natural means before resulting in the breakdown of the immune system which is the body’s mechanism of defence against illness, serious diseases such as cancer and other so-called incurable diseases would be revented, and so there would be little need for the administration of expensive conventional medicine since that would be necessary only in case of surgery and other traumatic conditions. Sad to say, it is reported that nutritional supplements as well as some alternative medicines packaged by some unscrupulous manufacturers are not quite what their labels indicate, and that the potency is far below what is required to be effective. This is not to suggest that they are toxic, but rather that they are not quite as effective as they should be. If this is so, my personal feeling is that such persons should be exposed and their names posted in full view for all to see. This should curb that undesirable practice. One must therefore be very cautious when choosing nutritional supplements as well as alternative medicines. Another point that I think worthy of note is about products so readily put on the skin. Most of them are formulated with harmful synthetic substances that get into the blood stream and invariably cause dangerous side effects. As it is said, what you would not eat, you should not put on your skin. Remember that the skin absorbs and cannot differentiate between synthetic chemicals and natural substances. You may not see the adverse effects now, but years later your skin would speak for itself. You do not want to look older than your age, do you? Then do not poison yourself with the topical application of toxic skin products. No one should be so busy so as not be able to find time to learn about the natural substances that they could take to protect their own bodies and prevent diseases. My Waffle Iron

By Paul Rinehart I had always wanted a waffle iron. At the age of six, I started asking for one, every Christmas and every birthday. I dreamed of making large, golden, square waffles that were slightly crispy on the outside and light on the inside. I got my first wok when I was six, my first ice cream machine a few years later, but sadly, no waffle iron. Im getting married later this year, and my fiance and I have already registered in at least one place. Can you guess what the first item I picked was? Thats righta waffle iron. It turned out to be a premature choice though, because to my surprise, I got my first waffle iron for Christmas. My fiance put in a good word for me with the rest of the family saying, Paul really wants a waffle iron. I love it; Ive already used it quite a lot since Christmas. I followed the recipe printed in the manual on the inaugural run. The more times I used it, the bolder I got. I made substitutions and even added other ingredients like swapping milk for buttermilk or oil for butter. I altered the amount of flour and even tried using pasteurized egg white; Ill never do that again. Pasteurized egg whites just dont fluff up the way non-pasteurized egg whites do. I hit pay dirt recently with my family. My latest experimental batter came out really well. So here it is, Paulys Long Awaited Waffle Iron Waffle Batter! Waffle Batter Ingredients: 2 cups of all-purpose flour 4 egg yolks 4 egg whites 1 pinch of cream of tartar 1 cup of butter milk 1 cup of sugar 2 tsp. of vanilla extract 2 tsp. of baking powder 1 pinch of salt 2 Tblsp. of melted unsalted butter First, add the cream of tartar to the egg whites. (Contrary to popular belief, cream of tartar does not produce greater volume, but it does assist in a more stable molecular structure). Whip the egg whites to a soft peak. You can tell your whites are done when you dip your beater into the white and it makes a peak that slumps quickly. Set the beaten egg whites aside. Next, beat the yolks and sugar until the mix turns a pale-yellow or off-white. Add your buttermilk and vanilla and mix. While stirring, gradually add the remaining dry ingredients, it helps if you mix the remaining dry ingredients separately first in a measuring cup. Make sure not to over mix it or you will excite the gluten in the flour and over-excited gluten makes for a very chewy waffle. Remember: Think golden, crisp on the outside and fluffy or light on the inside. Get your whipped egg whites and add them to the rest of your mixture. Gently incorporate them and dont over mix, or you will lose the bubbles. While stirring, add the butter. I have a Krups Wafflechef, it signals you when its heated and ready to go. Baking waffles in this iron only takes about 4 minutes. Dont go for a cheap, no-name iron, I highly recommend the Wafflechef. Pre-heat the waffle iron. Add about 2 oz. of batter on each square, making sure you dont put more than the iron can handle. If you do over-do it on the batter you will make a mess. Waffles are great for breakfast or even for dessert. They are great topped with maple syrup or whipped cream and fruit; even ice cream makes a fantastic topping! Happy waffle making!
